Understand the reason behind any major price differences between bids. 

Don't assume the lowest bid is the best.  A contractor asking a higher price may do a more complete job or use higher quality materials.

Every detail discussed should be put into writing.  Once the contract is drawn up, be sure to read and understand all of the details before signing.

Make sure your project is carefully planned from start to finish.  The more information the contractor has the more accurately he can predict all expenses involved.
